Recipe: Sushi Donuts
Classic sushi is always a crowd pleaser, so why not get creative and mix things up in the kitchen by making it - donut-style! Quick, easy and sure to be a family favourite, read on for the easy recipe you can make at home now.

Cooking time: 20 minutes
Makes: 12 sushi donuts
2 cups sushi rice, rinsed well
3 1/4 cups water
4 tablespoon rice vinegar
3 tablespoons caster sugar
1/2 teaspoon salt
Cooking oil spray
Sashimi trout and salmon
Black sesame seeds
Thinly sliced cucumber
Fish roe (optional)

Combine rice and water in a medium size saucepan. Bring to the boil, then reduce heat to low and cover with a tightly fitted lid. Allow to simmer for 16-18 minutes. Do not remove lid while cooking. Turn off heat, and set aside for 1 minute.
Meanwhile, combine rice vinegar, sugar and salt in a small saucepan and place over low heat to dissolve sugar. This takes 1 minute. Pour mixture over hot cooked rice and fold through with a wooden spoon or paddle.
Line a large baking tray with baking paper then carefully transfer rice onto tray. Flatten into a single layer with the back of wooden spoon or paddle, then cover with another sheet of baking paper that has been sprayed with a little cooking oil. Set aside to cool. This will take approximately 30-40 minutes.
Prepare 2 x 6 hole donut tray moulds by spraying lightly with cooking oil. Place some cooled rice into the moulds and fill. Press down until level with the top of the rim. Fill the other holes with remaining rice. Empty the moulds out onto a large serving platter when finished.
Top your donuts with your desired toppings by alternating with different toppings. Serve with wasabi and extra soy sauce.
