Kiwi classics with a twist this Matariki

A time to come together with your loved ones and community, Matariki lends itself to celebrations in many forms including classic Kiwi food.

To bring the Whānau together and celebrate the Maori New Year; Matariki, we are sharing our favourite Kiwi classics with a twist this Matariki. Entree, main and dessert - we have you sorted!

Kiwi Onion Dip with Bacon bits

Serves 4

INGREDIENTS

  • 250ml reduced cream
  • Maggi Onion soup mix
  • 3x rashers streaky bacon
  • 1 tsp lemon juice

METHOD

  1. Dice bacon and pan fry till golden. Set aside to cool.
  2. Pour reduced cream into a bowl and whisk in soup mix till smooth.
  3. Mix in bacon bits and set in fridge 30 minutes.
  4. Serve with a fresh squeeze of lemon and your favourite potato chips!

The Ultimate Kiwi Burger

Serves 6

INGREDIENTS

Patties:

  • 500g mince
  • 2/3 cup breadcrumbs
  • 1 brown onion diced
  • 1 whisked egg
  • 1 tsp minced garlic
  • 1 tbsp Worcestershire sauce
  • 1 tsp mixed herbs
  • salt & pepper to taste
  • 1 tbsp canola oil
    Buns:
  • brioche burger buns
  • 6 slices cheddar cheese
  • 6 tsp tomato sauce (1 per Burger)
  • 6 tsp aioli (1 per Burger)
  • 2 sliced tomatoes
  • 6 fried eggs
  • 6 serves iceberg lettuce
  • 12 pieces of sliced pickles

METHOD

  1. Mix the mince, breadcrumbs, onion, whisked egg, garlic, Worcestershire sauce, mixed herbs and salt & pepper together in a bowl until combined. Form 6 patties with your hands approx. 1.5cm thick.
  2. Heat a pan with canola oil. Place patties in the pan once hot and cook for 4 minutes each side till cooked through. Remove patties to a separate plate and place cheese on top of each to melt.
  3. Crack 6 eggs in the reserved pan and cook through till the yolk is at the desired consistency.
  4. Slice open the burger buns and lightly toast. Spoon tomato sauce and aioli on each, placing the patty on top. Finish with lettuce, tomato, pickles and a fried egg.
  5. Enjoy with a side of oven fries or coleslaw!

Pavlova with Berries and Cream

INGREDIENTS

  • 1 pre-made pavlova
  • 250ml fresh cream
  • 2 tbsp sugar
  • 1 tsp vanilla extract
  • 1/2 tsp ground cinnamon
  • bunch of fresh mint leaves
  • fresh berries (optional on availability: blueberries, raspberries, blackberries, strawberries, etc.)
  • 1 broken chocolate Flake

METHOD

  1. Beat cream, sugar, vanilla extract and cinnamon together till thick and fluffy.
  2. Spread a thick layer over the pavlova and top with mint, berries and a dusting of chocolate Flake.
